Better Than Meatballs Recipe

meatballsI always love sneaking in some extra non-animal protein that provides added fiber. It can be difficult to get children to eat beans, so this recipe is great for getting them in.

Plus, this really stretches your meat budget. With the cost of good quality ground beef versus organic beans, you’ll really notice the savings.

8oz grass fed ground beef $6  vs  $3.91 organic pinto beans 1 lb bag.

Meatball Recipe

1 cup cooked white beans (navy, pinto or other)
2 garlic cloves
½ onion (I like the flavor of red onions best)
Few tsp Italian seasoning (garlic powder & spices)
8 oz package of ground beef
¼ c flax meal
Few squirts Tamari or Braggs liquid aminos
Few dashes ketchup
In a saucepan, melt some butter and add minced garlic and onion and sauté on low until soft. Add in beans and when warm, add Italian spice. When well blended and warmed, use a potato masher to make a rough paste.
Combine above with ground beef, flax, tamari and ketchup and blend.

Heat some butter or coconut oil in a skillet on medium heat. Brown each side of the meatballs. Add sauce and reduce heat. Cook until meatballs cooked through.
